Unique and unexpected this gingerbread pie will exceed your expectations. On a quest to release my favorite childhood treat, gingerbread, from the confines of Christmas I created this custard like pie with a crackly sugary top. It is a great pumpkin pie substitute with the same warm notes and creamy texture. Topped with caramelized pumpkin seeds and pecans, and a good sprinkling of seasalt. This pie is love and no leftovers.
